Never in my wildest dreams would I consider myself a culinary goddess capable of whipping up delectable, organic and healthful treats for my children. That’s way too much pressure. Yet, recently, I discovered So Delicious unsweetened coconut milk. It’s creamy, dairy-free and works great as a base for many recipes, including desserts. Anyway, it’s a little warmer around here in southeastern Pa., and my kids are going through popsicles faster than the local Toys R Us is selling out of Shopkins. Well, maybe almost as fast.
I wanted my children to have a sweet treat, without all the not-so-good-for-you added sugars. These popsicles are concocted with just three ingredients: the fruit of your choice, organic honey and vanilla flavored coconut milk. The first time I did this, I used blueberries, and they loved them! This time, I used fresh strawberries.
I also picked up these super cool, silicon squeezable ice pop molds from the local Christmas Tree Shops. Pop these babies into the freezer for 30 minutes or so, and you get a sweet treat for you and your children, without all the extra sugars! Enjoy.
